My questions apply more so to a B, but could also be considered general.
Are people buying gasket sheets and cutting your own, or buying pre-cut gaskets? I believe the gaskets are cork; has anyone used a different material? Does anyone know what the gasket thickness is for the B?

I usually buy gaskets, but I've also made some. There are a couple for my WD45 that I couldn't find so I made. I made some cork ones for my skid steer last year. There a big cover on each side for the chain drives. Case wanted like $30 per side, so I bought a roll of cord for about $30. Made both sides with some left over.
I'm not sure on a B, but on a WD45 there are some places where gasket thickness is critical because it set gear mesh. So just watch out for that.

It totally depends on which gasket you need. Material and thickness is dependent on the use of the gasket. You can't make a thick cork gasket for an oil pump, and a thin gasket won't work well on the oil filter housing. I wouldn't even think about trying to make a head gasket, or one for the rocker cover. |

I likely need to replace the gasket around the oil pan. And the gaskets for the carb. What would you recommend?

If I can buy it, I buy it. I hade some for the thermostat housing because the shapes are simple and I had the gasket paper. I would not take on anything much larger or complex than those, myself.
