Some use a manual rack and pinion set-up from a small car and have it attached to the front axle and multiple small u-joints from the steering wheel shaft down to the rack and pinion. Those never turn very short and can be difficult to turn with a lot of weight on them. They are light weight tho.  I made a system years ago that worked excellent and still had power steering on a twin-turbo One-Eighty. With the hydraulic pump drive still on the engine, we drove a fuel transfer pump (that fed the Bosch "P" injection pump) on the front side of the timing cover and a small (4 GPM) and cheap Northern Hydraulics hydraulic pump on the rear. My drive couplings were always pretty crude but effective. You can find a cheap 3/8" drive impact socket that will almost press inside the engines hollow hydraulic pump drive shaft. Machine down the O.D. of this socket (one for front and one for rear) and press it inside the hollow drive shaft. It can't go anywhere. Then, make a 3/8" socket drive extension adapter that stays on each pump so they are easily installed and removed. The oil flow for this small hydraulic pump goes like this: suction oil supply comes from the engines oil pan, protected by a screen and up off the bottom of the deeper than normal oil pan. Yes. Engine oil 15W-40.  This small oil pump then sends the engine oil to the power steering orbitrol at the base of the steering wheel. The return oil flow from the orbitrol then goes to a regular 74027979 oil filter remotely mounted on the left side behind the bell housing for filtering. After the filter, the return oil is directed to the LEFT rear corner of the block and connects directly to the main oil galley. I had a simple one-way ball check valve at the engine block, so that oil could only go in and if there was a failure of the power steering system, no engine oil pressure could escape the main oil galley. So, we had TWO A-C engine oil filters handling oil filtration and the small 4 GPM (probably more like 7 or 8 GPM going down the track) adding to the engines OEM oiling system for great 80 psi oil pressure even with twin turbos. We would get 40 or 50 hooks on this 1200 HP engine and rod bearings were still in great shape. Proper oil viscosity (little warm-up time) twin filters and great oil pressure AND the benefit of power steering. How much better does it get ??
