I may just be confusing myself here.  I got the 3/8 NPT & 1/2 NPT size... But what is the fitting size on the steel tube pressure/sump Flare fittings?

Are they NPSM / NPTF connections?

That style fitting is called an inverted flare (think brake lines ) Be cautious on mixing and matching as there is some variations on flare angles (degrees)

it is called a 3/8 or 1/2 inch TUBE FITTING.... inverted flare

That is one of the charts I was looking at.

Are there any adaptors that will allow the connection of a standard Hyd Hose with either NPT or JIC fittings? 

I need to run a pressure hose back to a 3 spool control, and need to connect to the brass female that comes out of the pump.

As far as adapters go the options are endless.  For a few of the options just search Northern Tool for hydraulic street elbows.   You can adapt 3/8 NPT to tube, NPT back to NPT, NPT cross over to JIC etc.  Most are available in male to male, male to female etc.  If you want to go with a tube fitting that is almost impossible to have a leak from, you can go to industrial tube fittings.  These are crush type double flare fittings rated up to incredible pressures.  They are pricy but very simple to use.  In that case search the options at Swagelok.  These are just a few of the possibilities.

A shop that makes hoses, can make a hose with that type fitting on one or both ends, which ever you need. I've had hoses made with 90° inverted flare fittings to replace some tubes, like that one.

Measure the OD of the tube. That will tell you the size of the inverted flare fitting. If it is 1/2 in. it will have a 3/4-18 thread on the nut.
