made up some zuccinni chips tonight to go along with supper, here's how! flat cookie sheet, aluminum foil over it, coat with olive oil, slice the fruit in about 1/4 inch slices, place on cookie sheet, sprinkle: garlic powder, parmisan cheeze, and bake at 450 degrees for 10 minutes, lightly sprinkle more cheeze of choice on and then broil for 3 mins, take out, let cool and enjoy! the old lady.....oooooops.....I mean the loving wife also made up some sweet cucumber pickles yesterday. will get the info on that for ya'll soon.

I will pass that one along. Currently having leftover zucchini lasagna. Have also been splitting in half and covering with various things. Po boys, taco meat, Italian sausage and sauce, Philly and cheese. She substituted apples for zucchini in a mock apple crisp. Zucchini bars, zucchini bread. Added blueberries for a real treat.

I heard zucchini was gonna be declared a noxioux weed here. The old gal grew up eating it. They were so poor, that's all they had to eat 1 summer. She liked it. But not me. I'm more into Sweet Corn

As far as I'm concerned it is. But I'll tolerate it. We grow even more sweet corn. I don't need to doctor that up to enjoy it every day.

Since your almost to breakfast Wink don't forget to add the bacon.Smile Most vegetable are edible if you add bacon. LOL But some the ratio gets to 10 bacons for 1 vegetable.LOL

A stir fry with onions, bell peppers, and zucchini is really pretty good. Even if your out of bacon.LOL

We had zucchini, onion, green peppers simmered in canned tomatoes with some type of Italian seasoning and smoked sausage

Zucchini is good mixed in with a lot stuff, and by itself, also very nutritious.
Anybody here broccoli fans? Many health experts claim it’s one of the most nutritious foods on the planet.
I tried to follow the science, but it was not there. I then followed the money, and that’s where I found the science.
