I been having a hankerring for some good old fashioned corn bread. Some time ago,,I remember a thread on here but I did not write it down,,,, and then,,,I was reading the news and there was a recipe on some dude making what sounded liks real interesting corn bread. Anyone want to share theirs,,?

I add a can of cream corn and 2 table spoons of honey to mine.
I make it in a cast iron skillet which has 1/8” of oil and set in the oven while it preheats. Batter should sizzle when you pour it in the skillet. |

My grandmother usedta use the cheap mix that IGA stores had, in the little yellow boxes, mix it up like the directions say, and pour into the griswald corncob mold tray and bake in the ole woodstove oven. That and good home-made butter was our snack while watchin the original wild wild west...

Wife just uses the BOX at the grocery store like DAVE said.... Cheap and easy and tastes great... Got 2-3 different versions / flavors.

My wife has a recipe for ‘corn casserole’ that is delicious, part of the ingredients is corn bread mix. Corn bread itself, I am not much of a fan, don’t hate it but don’t seek it out when planning meals.

I'm kinda with Thad on this, I use HALF a can of creamed and 1/2 a can of whole kernel in mine. And it's the store bought (IGA) brand. I'll have to try that 2 Tbls of honey next time. (Might be New Years Eve)

Well,,I also think my Buddy Thad, has got a great idee on the honey and you can wager your last can of corn that I'll be getting some Honey in the morning and make a batch or two tamorrow morning,,,,,,

2 boxes of jiffy mix
2 eggs 2/3 cup of milk/half n half/ buttermilk 1 can of creamed corn Two table spoons of honey. I mix the jiffy mix Eggs and half n half up and add the cream corn. I melt butter in to the two table spoons of honey to get a flowing liquid. Mix it in the batter . Preheat the oven to 450 Add 1/8” oil to bottom of a cast iron 10” skillet. Set the skillet in the oven while it preheats. When oven is ready pour the batter in the hot skillet. It will sizzle on the bottom. Bake 20 minutes or until golden brown. Gonna have some with our black eyed peas this weekend. Don’t forget the greens. |

I don't cook much more than a peanut butter or ham sandwich but when Mama makes her corn bread she puts a can or two of mexicorn in the batter. Man that makes a whole new corn bread

If weren't for Corn Bread and Home Made white bread my Great Aunt made I would likely have starved to death, real picky as a Child. Home Churned Salted butter, Raw Honey and corn off the field kept me going!!! Her house smelled a Bakery where could almost have lived off that!

Joe, around here I don't think Wally World has any good honey. I buy local honey from one of the local feed or hardware stores. I prefer supporting our local businesses and farmers. Tyler, as much as I stay in the doghouse I had to learn how to cook or starve ![]() |

This is years ago, but Golden Harvest would have a guy at Husker Harvest Days, with a hit n miss engine, running a stone mill, turning out ground corn. That made the best corn bread, we always tried to come home with as many of the little bags as possible. Mom would make a pan of it, served with butter, and Karo dark corn syrup.

This is pretty much the one I use(minus the creamed corn) except three eggs,375° for 35 minutes. I've been told repeatedly that I should grease the skillet with bacon fat. But I use butter.

Hey Hubert,,,Walmart did have a real good selection of Honey so I got a small jar of local honey from next town down to try it and was pretty dang Good and made this recipe a winner,,,, ![]() ![]() That pan is just about gone,,,!!but I;ll be makin some more soon,,,, WAY TO GO,,,,

For the corn meal I like to use some open pollinated corn we raise; Reid's Yellow Dent or Bloody Butcher. I use the recipe in my old Betty Crocker cookbook. The Bloody Butcher corn is a deep red / maroon and turns blue when baked.

I went there in October and it was up and running. I did get a small bag full of stone ground cornmeal from there. I need to try it next time. |

Hey Thad,,,Yes I do remember as a fact of the matter,,!! That was a very interesting place to visit ,,more so as it was so way out in the country,,with seemingly nary a neighbor in 50 miles Did your MC group do their Get-Together there?? One thing I have decided is that there IS a difference in the different corn meals. The first batch I made was using the boxes of the Jiffy brand and was great,!! I like'ed it a lot with the added Honey,,!! and a week later I wanted some more and went to one of the local stores cause I like to buy from them bout half to them and Walmart and they did not have the Jiffy brand ,So I got their store brand and was way different in that it seemed to be grainier and twice as expensive,,,??? And was a different taste in the cooked corn Bread,,,, I'll be using the Jiffy brand for next batch
