My wife has a recipe, uses shrimp, and that chicken sausage. Its really good, one my favorites. I will have to dig out the recipe sometime. Although my wife does use a recipe for a ‘base’, she almost always improvises on what she cooks.
I tried to follow the science, but it was not there. I then followed the money, and that’s where I found the science.

I tried to post the recipe but couldn’t get it to go through.
In a large skillet mix in one large andouille sausage, I used 4 large chicken thighs, 2 large bell peppers(I like red and green), 2 large onions, 4 chopped cloves of garlic- (I use minced garlic) and a few stalks of celery sliced. Add a splash of olive oil and Cajun spices (I use strictly Tony C’s) and black pepper.
Cook down the long grain rice in a separate pot per instructions
Once the rice is done combine all in a large pot and add a cup of chicken broth. Simmer on low until it starts to thicken.
I didn’t have any but some green onion makes it look appealing and adds to flavors.

 Hey Thad,,,I just could NOT stand it no more so I copied your latest recipe and drove to town to get the fixins.There was only one pkg of Andoulle sausage so I had to substitute another brand that called itself Cajun Sausage,,,,,
 Everything was going along great when I notice the pot with the rice,,,it just kept growin and growin,,,finally had to dump bout half of the rice into another pot for later,,,and it just kept getting better and better and kitchen smelling many wonderfuls,,,!! Let her bubble for a good while and when my son couldn't stand it no longer,,,,we dug in and man was it GOOD,,!!  On my third bowl now so best quit else they ain't gonna be any left for leftovers tamarrow,,,,,Clap

   Well, heated up th last bowl of " Thad's Wonder Cajun" jambalaya while ago,,,,,Dang but it is GOOD,,,!! My son told me I "mighta" put a spoonfull too much of Tony's when I built it but it still GOOD,,!!

That last batch I made went away fast.
I came home from work one night and was gonna finish it off and saw the empty bowl in the sink.
Jenny never said it was really good but then I’ve never seen her eat leftovers much.
I took it as a compliment weather I should have or not.

 Well, Thad,,you talked me into it so I go to Walmart and like to fell over,,,,The Andoulle Cajun sausage was marked $12.55 EACH for the 12oz pkgs,,,!!!  I stopped a Walmart dude to check the price and he tells me the price marked is correct,,!!SO,,I did a Shameless,,and put the 2 pkgs back and walked out,,CHIT,,$25 bucks for twp pkgs of Andoulle sausage,,,,?  Maybe next year,,,,!Wink
 BUT,,I was really hankerin for some Jambolaya,,,so I gonna try the other store and sure enough...thay have a whole shelf of several brands from $3.59/pkg to $4.66/pkg ,,,,how could Walmart be so far off from their local competitor,,,???
  Anyway, it came out Many Wonderfuls  and just the right amount of "heat", (took dang near half a bottle of Tony's Tho),,,,,LOL
 Shameless,,,I made a BIG pot this time, so you don't have to be peeking thru the window,,,,,,,LOLLOL

Joe we already had the andouille but I needed some chicken for it. I nearly fell over at the prices of leg quarters n such.
I bought a rotisserie chicken already cooked for much less than frozen.
Jenny’s out of town so I had a big list.
I was overwhelmed at the prices. I believe our local store to be better priced on many items than Walmart.
$3.20 for half a gallon of milk.

Joe, the price disparity is probably because Wallyworld runs out often and so they have NEW stock.  The other stores have had theirs in their coolers, so still the OLD price.

I don't know WHERE THEY GET THE inflation rate that they tell us about.  Currently it is at 8.4%.  Somebody is lying to somebody.  Most of the food stuffs have gone about 80 to 100% and I'd LOVE to see gas at only an 8.4% increase over the last two years....

Thad, I've made a number of Shrimp Boils over the winter and we love em, but I'm going to have to try this recipe!

Speaking of Andouille sausage, because I also put it into the shrimp boil, the only one i'll buy anymore is Johnsonville.  I've tried em all simply because you can't always find the one you want.....  Johnsonville is the BEST!!  That is where the real taste comes from in these dishes.  YUMMMmmmmm...  it's breakfast time, but if I had some leftovers, I'd eat em right now!
