160F was factory installed......180F is if you want it hotter for maybe wintertime operation.

160 for alcohol antifreeze, 180 for ethylene glycol (permanent) antifreeze and if you want to get it hot enough to boil condensation out of the crankcase. The engine efficiency will be a bit better with 180 as the cylinder walls and head will be a little warmer and so absorb a little less combustion heat.
