How is a manual guage with a bulb added to housing replacing the little electric probe?

Is there not another plug in the housing you can remove? Could drill and tap larger where existing sender is if all else fails.

That was the plan, but I just wanted to ask the experts in case I was missing something.

The housing on early models is tapped for larger thread size.  At least it is on mine.  Don't have a picture of  my housing but I think it was 3/4" NPT.  Mine had one reducer to install the manual bulb style temp gauge.

If you could find an early housing it would save drilling and tapping.
