 I have seen some door latches that can open from inside or outside of chicken coops,,,,? Something like this? I would think a smaller version is surely available. Or you could make this work if the gap isn't to big around the door

 This factory coop from TSC came with a sort of latching device like something I aint ever seen,,
 It has a 1" long of 1" dia piece of metal pipe that you have to PUSH AND HOLD "UP" to open the gate,,,when you let this piece drop, it falls into a space that a "PIN" then keeps it from sliding UP to open the gate ,,,,,Biggest problem is when you are inside the coop, refilling water or groceries,,it is almost impossible to reach around the 1" square tubing frame using BOTH fingers and thru the frame to push up and hold the sliding metal barrel while pushing gate open and keeping the chickens from running outside past you,,,,!!!!  Really Rube Goldburg apparatus,,,!! Easy to open on OUTSIDE but HE## to open from inside,,,!!!
  I have seen some on ranch gates that use about 3/8" rod or 1/2" strap shaped in a U that  straddles the gate post with a handle on inside and outside,,,but my engineering mind cannot come up with a solution,,,,

Basically, a sliding bar with a dowel through it. there is a slot cut in the door and the dowel (handle) is able to slide the bar from inside or outside.  That is what was on our outhouse when I was growing up
