Picked my fourth picking of these 14 plants today. 2 hours later had 11 gallons of sauce.

Looks like you cook them up like we do......some I don't even water bath. One of the easiest veggies to can, that and dill pickles and dilly beans!

This batch I ran through the sauce master raw and cook them dow to 50%. the 6 gallonpot wil be canned as plain sauce. the 2 gallon pot is already made into mexican tomato sauc. I also grew all the peppers and onions. and the 4 gallon one will be basic spagetti sauce tommoro. it takes about 8 hours to reduce a batch down to half. I've already canned enough pealed and quarted for this year. and still have 40 pints of salsa left from last year. I've also given almost twice that many away. I'll have to pick again in 3 or 4 days then I'm ripping the plants out. I've alreadt got the 15year old manure piled next to the garden so I can dig it in this fall.
