What everyones ways to make tender roast beef ?  Church picnics and now Fall Festivals always have the best,,  trying to find the secrets!!

another vote for low and slow ...crock pot or whatever method you can do the same low temp and longer cooking time.

Years, and years ago, Mom would buy what was then called ‘chuck roast’, back in the day it was about the cheapest cut of beef available. Cooked slow, in one of those dark blue/black porcelain baking pots w/lid. Couple cups of water, and a package of dried soup mix sprinkled over the meat. 4 hours or so in an oven, lowest heat setting 150 degrees?

I'm not a cook and don't plan on being one, but my wife (learned from my MIL) places a roast beef in the oven at a very high temp searing the outside.  After a certain time, turns it down and slow cooks with the carrots and potatoes.  Searing it seals in the juices and it is darn good

I usually sear in hot pan on each side before putting in crock pot.  Keeps it fairly moist but it is pretty easy to leave in pot too long and dry it out.

Ive tried the crockpot- on low for 8 hours , water- juices in it. after 2 hours its already done ,, and tough, bought another pot ,, same deal , cant figure what is going on,, we put deer meat in a black kettle years ago under a fire,, dam that was good eating !

try putting in Dr Pepper instead of water in your crock pot, always low and slow, same low and slow ina smoker. I have used Sunkist orange soda in the crock pot and it turned out very well...have to use the Sunkist brand...not any orange soda will do. if you use an outside grill, put ona spit and let it cook slow, there you will want to use your favorate seasonings, rub it in good, and cook til it's blackened on the outside, will be tender on the inside. look up vids on you tube on the BBQ Pit Boys, they show alot of different ways to do it and what type meats to use, usually they also use a cheaper cut of meats. they like hot spicy stuff, you can adjust that out. I like watching them cook about anything...it's good entertainment! If you don't have a spit, don't use your battery drill, it'll burn it out, not from the heat of the grill...but from the slow setting to turn the spit.

Of course it all depends on the cut of beef and the weight, but slow and low.  I use 250 for 4 to 6 hours and check halfway through so it's not dried out.  I've also used Dr. Pepper and it works great.  I tried coke one time and the whole thing just fell apart.  Wasn't worth spit.
LOTS of onions, mushrooms, baby carrots and spuds (preferably red) with the skins on.  Cornstarch for a thicker gravy....YUMM!!!  Dang, and I'm having a taco salad for supper tonight.
