Well,,,I've always liked squash "pies" we call em Empanadas which are made with the meat from various different squashes including sweet potatos. A lot of people fill the "D" shaped dough Pies with many different types of meats and even veggies too,,,, I like them too but prefer the sweet ones better. My wife never made any as she did not like sweet taters OR squash,,,,!! My Mother always used to make them during the holidays, mostly using the sweet potatos for the fill. Anyone have a recipe from your wife or Mother on how to fix the filler using squash ones??

I use butternut squash, lots of meat, small seed cavity. Peel, cut up in chunks, boil and mash like you would potatoes. I then just use the recipe on canned pumpkin except I leave out the cloves, can't stand the stuff, had a lot of toothaches as a kid and that's what was put on it. I was in grade school before I ever ate an actual pumpkin, pumpkin pie. My mother and grandmother always make them from butternut squash.

Well, Dave H,, that is the ones I'm tryin to use if I could only find the recipe for the spices used,,,!! SO,,you do cut the skin off? I've heard it done both ways and I figured the skin might make it kinda bitter,,,,??? I'm check out youtube and see what ole Shameless is talkin about,,,,,,?

Hey there! I stumbled upon this post and couldn't help but share my mom's pumpkin recipe. She used to make pumpkin bread every year for Thanksgiving, and it was always a hit. Here's the recipe: Ingredients: 3 cups flour 2 teaspoons baking powder 2 teaspoons baking soda 1 teaspoon salt 2 teaspoons cinnamon 2 teaspoons nutmeg 2 cups sugar1 cup vegetable oil 4 eggs 2 cups canned pumpkin Instructions: Preheat oven to 350°F. Mix dry ingredients in a large bowl. In a separate bowl, beat sugar and oil until combined. Beat in eggs, one at a time. Add canned pumpkin and mix until combined. Slowly add dry ingredients to the wet mixture and mix until just combined. Pour batter into two greased loaf pans. Bake for 60-70 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a wire rack to cool completely. Hope you enjoy it! I grow the Libby canner type pumpkins and that is the best for pie or bread. still got 2 in the basement storage from last fall harvest. good keepers too.
