Heard a good one today , Farmer Dave said theres a shortage of maple syrup from Canada- so we have to dip into our maple syrup reserves, ?? Never heard of maple syrup reserves?? Where are they ????

We were too busy looking at all his orange and other stuff to get a good look behind the sugarhouse, plus, he bribed us with maple mustard and other things...

  That maple mustard he does is GOOOOOOD!  The maple syrup is as well.

I am not fully up on what happens in the various state producer associations but in Canada, Quebec produces about 80% of the supply of syrup. They operate under a marketing board and a quota system. This coming year they are releasing more quota (more taps) to increase the supply of syrup to meet the demand. They always keep a stock of syrup in reserve to use when the demand outstrips the current supply. It is simply sound practise to do so. All maple syrup in Quebec  is regulated to be sold through the Board and they call the shots. You may not care for the method but it works to maintain a steady supply through lean years as well as keep a flood of syrup off the market in a good year to maintain the price.

Canada runs the show, making as mentioned, 80% of the maple syrup in the world.
Yes there are reserves. and Yes I have heard of syrup being stolen.
