How do I do an engine compression test on a WC that has only a hand crank an no electrical system?

make sure you have a compression tester that threads into the spark plug hole.
if you pull all four plugs, have the throttle wide open and give it a few good hard pulls with the hand crank that is one way.

Or you could pull one plug at a time and just start the engine and check them all that way.

I think I would drag it around the yard in 2nd or 3rd gear with the compression tester screwed into it

All spark plugs removed. Throttle wide open. Pull it in 4th gear so the tester pumps at least 10 times. Switch to the next cylinder.

Most compression testers have a check valve to hold the highest pressure achieved.
