Bosch pump on R52 with Cummins. Throttle shaft is stuck at wide open, combine runs at idle. Whole pump need to come off?

sounds like it should be taken off and looked over. That doesn't sound like a simple fix on the engine.

How are these timed? What's your turnaround time?

a week or 2 turnaround on something that is needed to finish farming. Timing of the Deutz can be complicated. Best to ask someone local to time it, unless this newer one has a timing pointer on the pump hub. If so, then a piece of cake, turn it until the hub mark lines up with the pointer. Older Deutz engines had to be spill timed, since they had no marks on the pump drive hub. The hub is keyed, and can be taken off, so it can be left in the drive gear, then mark the housing in relation to the mounting plate.
