In what year and what models did AC go to closed center hydraulics?

Mid 70's with the 7000 series.

1973 with the new generation 7030 and 7050 tractors. It was farm equipment's FIRST tractor with variable volume/variable pressure hydraulics. Took Deere 20 more years before they used it on their products.
