baler wont drop the knot on the left side (when facing back of tractor). replaced the bill hook and adjusted the wiper arm and still nothing.

had the same problem on a 336 deere but I cant remember exactly what it was that fixed it but I recall a wire being broker right above the bale chamber

Is it just the tail of the knot left in the slot? If it is loosen the tensionon the bill hook tongue 1flat at a time until the tail drops out.

My NH 565 had all kinds of knotting issues a while back. The hardest problem with mine to find was the hay dog springs on the bottom side of the hay chamber being worn out. The last owner replaced the top dog springs but not the bottom. With the hay chamber empty check to see that the hay dogs are held back hard against the frame. If they don't hold the first section of the next bale back you can get all kinds of weird knotting problems that come and go based on how thick the hay is.
Also check that the shaft for the knife is actually tight mine was flopping around loose I ended up having them sleeved to tighten them up. Mine where loose enough that I could adjust the knife to the bill hook but when I lowered the knotters to the working height the adjustment was inconsistent and the knot would be stuck on the bill hook.
